The purpose of the Bakery Manager role is to drive commercial performance, operational excellence, and product quality within the bakery department. The role ensures consistent delivery of high-quality bakery products, strong sales and margin performance, compliance with food safety standards, and a positive customer experience while leading and developing a skilled bakery team.

Minimum Requirements

  • Grade 12 (Matric)
  • Food Safety / Hygiene certification added advantage
  • Baking or Food Production qualification
  • 3 to 5 years’ experience in a bakery or fresh food retail environment
  • Minimum 2 years’ experience in a supervisory or management role

Commercial & Sales Performance

  • Drive bakery sales growth through effective range selection, production planning, and promotional execution.
  • Analyse sales, margins, and trends to identify opportunities for growth and improvement.
  • Ensure correct LANS are aligned to bakery products, portion control, and yield management to protect gross profit.
  • Implement initiatives to increase customer traffic, basket size, and repeat purchases.

Product Quality & Craftsmanship

  • Ensure consistent production of high-quality, fresh, and appealing bakery products.
  • Maintain strict adherence to recipes, specifications, and quality standards.
  • Champion product innovation and modern baking techniques aligned to the Baker of the Future concept.
  • Conduct regular quality checks and take corrective action where required.

Operations & Production Management

  • Plan and manage daily and weekly production schedules to meet demand and minimise waste.
  • Ensure efficient workflow, correct labour deployment, and effective use of equipment.
  • Maintain bakery equipment in safe working order and arrange repairs promptly.
  • Ensure excellent housekeeping, hygiene, and safety standards at all times.

Stock, Waste & Shrinkage Control

  • Manage ordering, receiving, storage, and rotation of raw materials and finished goods.
  • Maintain accurate stock levels and conduct regular stock counts.
  • Actively manage waste, markdowns, and shrinkage in line with targets.
  • Investigate variances and implement corrective actions.

Food Safety, Hygiene & Compliance

  • Ensure compliance with food safety legislation, health regulations, and internal standards.
  • Maintain accurate records for temperature checks, cleaning schedules, and quality controls.
  • Prepare the department for internal and external audits and inspections.
  • Train and enforce safe food handling and hygiene practices.

People Leadership & Development

  • Recruit, train, coach, and develop a skilled and motivated bakery team.
  • Set clear performance expectations and conduct regular performance reviews.
  • Manage attendance, discipline, and labour scheduling in line with legislation and company policy.
  • Build a customer-focused, high-performance culture.
